SWEET & HOT PORK TENDERLOIN Seasoned Pepper
Serves 4 – 6; Oven 375F
1Tenderloin of Pork
1 Tablespoon Seasoned Pepper
1/3 cup honey
1 tablespoon tomato ketchup
2 tablespoons oil
2 tablespoons red wine
1 teaspoon brandy or to taste
2 cloves of garlic quartered
1. Trim the ends off the tenderloin and discard, or keep for another dish.
2. In a plastic bag mix together the honey, Seasoned Pepper and ketchup. Place the pork in the bag, seal the top and toss so that the pork is covered with the marinade on all sides. Chill for at least 2 hours, overnight is better.
3. Place the pork and the marinade in a roasting pan and roast in 375°F oven until the thermometer reads 165°F when inserted into the fattest part of the meat. Remove the pork from the roasting pan; place it on a carving platter. Carve the pork and serve, accompanied by the sauce.
For a milder pepper taste, try using Garlic Pepper Seasoning in place of the Seasoned Pepper.
This recipe can also be prepared in an electric skillet.
