STRING BEANS WITH SHALLOTS Wicked Good Salt
1 pound fresh string/green beans, ends removed
2 tablespoons unsalted butter
1 tablespoon EVOO
3 large shallots, diced or 3 tablespoons chopped onion
½ teaspoon freshly ground black pepper
1 teaspoon Wicked Good Salt
1. Blanch the string/green beans in a large pot of boiling salted water for 3 minutes, until they are tender crisp. Drain immediately and immerse in a bowl of ice water.
2. Heat the butter and EVOO in a large sauté pan (12 inches in diameter) or large pot. Sauté the shallots on medium heat, tossing occasionally, until lightly browned. Drain the beans and add to the shallots with the Wicked Good Salt and black pepper, tossing well. Heat only until the beans are hot.
