SHRIMP PESTO LINGUINE Sundried Tomato Seasoning & Pesto
1 pound linguine
1 medium onion, sliced
2 cups fresh mushrooms, sliced
1 tablespoon EVOO
20 shrimp, fresh or frozen
½ cup pine nuts, toasted
¼ cup Parmesan cheese, shredded
⅓ cup EVOO
½ cup water
8 tablespoons Sundried Tomato Seasoning & Pesto
1. Prepare Sundried Tomato Pesto according to the directions on the bottle; set aside.
2. Cook linguine as directed on package.
3. Sauté onions and mushrooms in 1 tablespoon EVOO until tender. Add Shrimp and cook until pink, approximately 3 minutes.
4. Drain pasta and toss with prepared Sundried Tomato Pesto. Place on 4 dinner plates. Top pasta with shrimp mixture and sprinkle with pine nuts and cheese
