QUICK & SIMPLE CHICKEN LASAGNA Traditional Italian
8 Servings Oven at 350F
1 rotisserie chicken, skinned and the flesh torn into pieces
3–15 ounce cans plain diced tomatoes
4 Tablespoons Traditional Italian Seasoning
1 cup water
2 cups shredded part skim mozzarella cheese
2 x 10 ounce packages frozen chopped spinach, thawed & drained
4 ounces crumbled goat or feta cheese
1 tablespoon Oh! So Garlic Seasoning
8 ounces no-boil lasagna noodles
1. Mix the chicken with the tomatoes, Traditional Italian Seasoning and water. Mix the spinach with the goat cheese and Oh So Garlic seasoning. Grease a 12 x 9 x 1 ovenproof dish with butter (or use cooking spray). In the dish spread a thin layer of the chicken sauce.
2. Top with ⅓ of the noodles, a layer of chicken sauce, mozzarella, and half the spinach mixture. Repeat with a layer of noodles, chicken sauce, mozzarella, and remaining spinach mixture. Finish with a layer of noodles, chicken sauce, and mozzarella.
3. Bake covered for 50 minutes. Uncover and bake 5 minutes longer or until bubbly.
