PORK TENDERLOIN (W) SWEET POTATOES AND APPLES Smokey- Sweet Barbeque
Serves 4 to 6
2 tablespoons Smokey Sweet Barbeque Seasoning
⅓ cup brown sugar, packed
2 pork tenderloins, about 1 pound each
1 tablespoon cooking oil
¼ cup orange juice
3 medium sweet potatoes, about 1 ½ pounds
peeled and cut into 1 inch cubes
2 apples, Gala or Fuji, unpeeled, cored and halved
1. Preheat oven to 425˚F. Mix Smokey Sweet Barbeque Seasoning with brown sugar. Reserve ¼ cup. Brush tenderloins with cooking oil and rub with seasoning mix. Place tenderloins in center of a large shallow foil lined baking pan.
2. Mix reserved seasoning mixture with orange juice in a large bowl. Add sweet potatoes and apples; toss to coat well. Arrange sweet potatoes and apples, cut side down around tenderloins.
3. Roast 30 to 35 minutes or until desired doneness and sweet potatoes are tender. Toss sweet potatoes and apples with pan juices; serve with sliced tenderloin.
