PESTO GRILLED CHEESE SANDWICH Basil, Garlic & Pine Nut Pesto
8 slices Italian bread, or your favorite
4 tablespoons softened butter, divided
4 slices provolone cheese
4 slices cheddar cheese
8 slices tomato
⅓ cup EVOO
½ cup water
8 tablespoons Basil, Garlic & Pine Nut Pesto
1. Prepare Basil, Garlic & Pine Nut Pesto according to package directions. Let stand for 15 minutes or heat in the microwave for 30 seconds.
2. Spread four slices of bread with butter on one side and place them butter side down, onto a nonstick skillet over medium heat.
3. Spread the top of each bread slice with 1 ½ teaspoons of prepared Basil, Garlic & Pine Nut Pesto, a slice of provolone cheese, two tomato slices and a slice of cheddar cheese. Spread additional four slices of bread, on one side, with remaining pesto and place the bread slice, pesto side down, onto the sandwich. Butter the top side of the bread.
4. Gently fry the sandwich, flipping once, until both sides of the bread are golden brown and the cheese has melted, about 5 minutes per side.
