JALAPENO SALMON STEAKS Jalapeno Cilantro Oil
4 steaks salmon
1 red onion cut into thin slices
6 tablespoons Jalapeno Cilantro Oil, divided
2 tablespoons butter
½ cup loosely chopped cilantro
¼ cup chopped chives
1. Over medium high heat sauté the onion in 4 tablespoons of the oil till transparent, about 3 minutes.
2. Add to the pan the remainder of the oil and the butter. Place the salmon in the pan and sauté, over a medium heat, until the fish is lightly golden on both sides and just cooked through. Divide between four pates. Sprinkle with loosely chopped cilantro and chives. Serve hot.
