CHICKPEAS (W) BROCCOLI RABE Traditional Italian Seasoning
1 pound broccoli rabe trimmed and cut into 2-inch pieces
1 tablespoon EVOO
6 slices center-cut bacon, chopped
1 cup chopped onion
3 tablespoons Traditional Italian Seasoning
6 cloves garlic, thinly sliced
1 – 15 ounce can chickpeas, rinsed and drained
¼ teaspoon salt
¼ teaspoon black pepper
2 ounces Parmesan cheese (chunk)
1. Cook broccoli rabe in a large pot of boiling water 2 minutes or until crisp-tender; drain.
2. Heat a large skillet over medium-high heat. Add EVOO to pan; swirl to coat. Add bacon and sauté 3 minutes stirring frequently. Add onion, garlic, and Traditional Italian seasoning, sauté for 2 minutes or until onion begins to soften, stirring occasionally.
3. Add chickpeas; sauté 1 minute longer. Stir in broccoli rabe, salt and black pepper; cook 2 minutes or until thoroughly heated, tossing to combine.
4 .Divide chickpea mixture on four serving plates and shave ½ ounce Parmesan cheese evenly over each serving.
