BASIL GARLIC POT ROAST, SLOW COOKED Basil, Garlic & Pine Nut Pesto
3 pounds English cut beef roast, cubed
½ pound white mushrooms, sliced
6 Yukon Gold Potatoes, cubed
1 pound carrots, chopped
½ cup red wine
1 cup chicken broth
3 tablespoons Basil, Garlic & Pine Nut Pesto, or to taste
¼ teaspoon salt, or to taste
½ teaspoon fresh ground black pepper
1. Place cubed beef, mushrooms, carrots and potatoes in crock pot.
2. In a medium sized bowl combine remaining ingredients, pour into crock pot.
3. Cook on high for one hour and lower heat for an additional 7 hours.
