BAKED SHRIMP WITH PESTO Sundried Tomato Pesto & Seasoning
1 pound medium to large shrimp, peeled and deveined
2 tablespoons butter
¼ teaspoon salt
½ cup dried breadcrumbs
6 tablespoons Parmesan cheese, separated
8 tablespoons Sundried Tomato Pesto & Seasoning
⅓ cup EVOO
½ cup water
1. Prepare Sundried Tomato Pesto according to package directs, set aside.
2. Sauté the shrimp in the butter until they are no longer opaque (about 3 minutes). Season lightly with salt.
3. Set shrimp in an oven proof dish and cover with prepared Sundried Tomato Pesto. Sprinkle with dried breadcrumbs and Parmesan cheese.
4. Broil on middle rack in oven just until the cheese browns nicely. Serve hot with crusty bread.
