WICKED GOOD LEMON KALE SALAD Wicked Good Salt
1 pound uncooked kale, washed, tough stems removed
3 tablespoons uncooked shallots, minced
4 teaspoons fresh lemon juice
1 tablespoon honey
1 teaspoon lemon zest
1 teaspoon Wicked Good Salt, or to taste
¼ teaspoon fresh ground black pepper
2 tablespoon EVOO
¼ cup shredded Parmesan cheese
1. Stack several kale leaves in a pile, roll and thinly slice the leaves. Place kale in a serving bowl; set aside.
2. In a small bowl, combine shallots, lemon juice, honey, lemon zest, Wicked Good Salt, and pepper; whisk in EVOO in a slow stream. Pour vinaigrette over kale; add Parmesan cheese and toss until mixed.
