JALAPENO SALMON STEAKS Jalapeno Cilantro Dipping Oil

Serves 4

4 steaks salmon
1 red onion cut into thin slices
6 tablespoons Jalapeno Cilantro Dipping Oil, divided
2 tablespoons butter
Salt and Pepper to taste
½ cup loosely chopped cilantro
¼ cup chopped chives

1. Over medium high heat sauté the onion in 4 tablespoons of the Jalapeno Cilantro Dipping Oil till transparent, about 3 minutes.
2. Add to the pan the remainder of the Dipping Oil and the butter. Place the salmon in the pan and sauté, over a medium heat, until the fish is lightly golden on both sides and just cooked through. Check seasoning and add salt and pepper to taste, if desired. Divide the dish between four pates. Sprinkle with loosely chopped cilantro and chives. Serve hot.
