HIMALAYAN CHICKEN CASSEROLE Himalayan Style Rice
Serves 8 350ºF oven
1 package Himalayan Style Rice
¼ cup butter
¼ cup flour
1 (12 ounces ) can evaporated milk
1 ½ cups chicken broth
3 cups cooked chicken breast, diced
1 (6 ounce) can sliced mushrooms, drained
⅓ cup bell peppers, chopped
¼ cup pimento, chopped
¼ cup slivered almonds, toasted
Salt to taste
1. Prepare Himalayan Style Rice according to package directions.
2. In a medium size pot melt butter and stir in flour. Gradually stir in milk and chicken broth. Simmer until smooth and thickened slightly.
3. When rice is cooked, place in a large mixing bowl and mix in cream sauce.
4. Add chicken, mushrooms, peppers, pimento. Spoon into a large greased casserole dish.
5. Sprinkle top with almonds that have been toasted.
6. Bake in 350°F oven for 35 to 40 minutes.
