HEARTY RICE AND SAUSAGE Himalayan Style Rice
Serves 4-6
1 package Himalayan Style Rice w/Thyme & Garlic Seasoning
2 tablespoons oil
1 cup sliced Chorizo or hot Italian sausage
1 red bell pepper or chili peppers, cut into strips
˝ large red onion, cut into strips
1 15 ounce can red beans, drained
2˝ cups water
1. Pour rice, seasoning packet 1 tablespoon oil and 2˝ cups water into a 2 quart pan. Stir, cover and bring to a full boil. Reduce heat; simmer for 35-45 minutes. Check the texture after 35 minutes.
2. Meanwhile, in a large skillet, heat the remaining oil and sauté the sausage, pepper and onion until slightly browned.
3. When the rice is cooked, add it to the sausage mixture and beans. Cover and let stand for 10 minutes, keeping warm.
4. Check seasoning before serving. Salt & pepper may be added to taste.
