GRILLED ROASTED POTATOES Mediterranean Herb Dipping Oil

Redskin or baby Idaho gold potatoes
Mediterranean Herb or Traditional Italian Dipping Oil
Salt and Pepper to taste, if desired

Cut the potatoes into four. Set on a sheet of heavy duty aluminum foil about 18” long. Drizzle with the Dipping Oil. Fold up the edges of the foil to make an envelope around the veggies and seal well.
Cook on the barbecue or in the oven at 375 until the potatoes are cooked in the center when pierced with a sharp knife, about 30 minutes
