CARAMELIZED ONION, MUSHROOM & SPINACH PILAF Seven Grains
Serves 6
2 cups vegetable broth
1 package Seven Grains with Southwestern Seasoning
1 cup water
3 teaspoons olive oil
1 1/2 cups onions, chopped
8 ounces mushroom, sliced
4 cups baby spinach
Salt & pepper to taste
1. In a medium saucepan over medium-high heat, bring broth, water, Seven Grains and seasoning packet to a boil; cover. Reduce heat to low and simmer until grains are tender about 45 minutes.
2. 15 minutes before grains finish cooking; heat oil in a large nonstick skillet over medium-high heat. Add onion; cook over medium heat, stirring occasionally, until onions are golden and tender, about 8 minutes. Add mushrooms; cook, stirring occasionally until mushrooms are golden and tender, about 5 minutes. Add spinach, cook, stirring until spinach wilts, about 1 minute more.
3. Spoon Seven Grain mixture into skillet; stir over low heat until well-combined. Add salt and pepper to taste.
