CAJUN SAUTEED SHRIMP Cajun Seasoning
Serves 6 - 8 as an Appetizer
3 tablespoons brown sugar
4 tablespoons Cajun Seasoning
2 Lbs peeled de-veined uncooked jumbo shrimp, tails left intact
4 tablespoons olive oil
1. In a medium bowl, mix together the sugar and Cajun Seasoning. Add the shrimp and toss to coat. Cover, chill and let stand for at least 1 hour for flavors to develop.
2. Set a skillet over high heat. Heat the oil. Add the shrimp and cook, about 1 minute each side, turning over half way through the cooking process.
The shrimp may be cooked on the barbecue grill. Get the grid really hot, about 10 minutes on a gas grill. Reduce the flame to medium heat. Brush the shrimp with oil, set them on the grid and grill until grill marks form, about 1 minute per side. If the grill marks don’t form the shrimp will still color up nicely.
