BLACK BEAN BURRITOS Himalayan Style Rice Mix

Serves 4

1 - package Himalayan Style Rice Mix prepared according to package directions
1 can black beans
1 x 8oz can tomato sauce, divided
4 flour tortillas
2 tablespoons olive oil (divided)
salsa and/or sour cream (optional)

1. Mix the beans, prepared rice, and half tomato sauce. Heat until warm.
2. Dip the tortillas in remaining tomato sauce. Fill with rice and bean mixture.
3. Fold burrito style and place in a skillet with 1 tablespoon heated olive oil, add the remaining oil as needed. Cook until brown on both sides. Serve with salsa and sour cream (optional)
