ASIAN CHICKEN RICE SOUP Green & Mochi Rice, Oh So Garlic!

Serves 6 to 8

1 container Green & Mochi Rice Mix
1 tablespoons Oh So Garlic
1 tablespoon olive oil
2 cartons (32 oz) plus 1 ½cups Chicken Broth
1 package (12oz) Broccoli or Rainbow Slaw
½ Lb boneless skinless chicken breast cut into bite size pieces
2 green onions, slices on bias
¼ teaspoon dried hot pepper flakes (optional)
Salt & pepper to taste

1. Drizzle oil in a soup pot and heat until almost smoking. Add the seasoning from rice mix and Oh so Garlic, stir until coated with oil. Add the chicken stock and bring to a boil. Reduce heat to medium and add the chicken
2. While the chicken is cooking, in a 2 quart sauce pan cook the rice in 2½ cups of water for 8 minutes. Drain off any excess water and add the rice to pot with broth and chicken. At this time add the slaw mix as well. Heat an additional 5 minutes.
3.Serve with green onions as a garnish
