A LIST OF SERVING SUGGESTIONS FOR COUSCOUS

1. Add finely dice ham or chicken or any leftover cooked meat especially grilled hamburger or sausage.
2. Chicken buffalo wings, sliced, are particularly delicious.
3. Try adding halved cherry tomatoes or matchstick slices of zucchini or carrot 4 minutes before cooking is finished.
4. Just before serving, add 1 small can of diced green chili peppers.
5. Before serving, stir in ¼ cup freshly chopped parsley or cilantro.
6. Before serving, add ½ cup diced onion sautéed.
7. Before serving, add ¼ teaspoon red pepper flakes, or to taste.

Summer Salad: To cooked, chilled couscous add 2 cups spinach leaves, coarsely chopped, ½ cup cooked, peeled shrimp or chicken, ½ cup crumbled feta cheese, 2 tablespoons toasted pine nuts. Toss together with ¼ cup olive oil and 2 tablespoons white wine vinegar. Serve at room temperature.
